Prepare the Base
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the uncooked rice, diced chicken, sliced zucchini, and chicken broth.
- Add garlic powder, onion powder, Italian seasoning, salt, and pepper to the mixture. Stir until well combined.
Bake the Dish
- Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
- Cover the dish with aluminum foil and bake for 30 minutes.
Add the Cheese
- After 30 minutes, remove the foil and sprinkle the shredded cheddar and mozzarella cheese evenly over the top.
- Return the dish to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve
- Once baked, remove the dish from the oven and let it cool for 5 minutes before serving.
- Spoon the cheesy zucchini chicken and rice bake onto plates and enjoy!
