Ingredients
  

For the Cake Base
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee cooled
For the Filling
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream whipped
  • 1/4 cup powdered sugar
  • 2 tablespoons coffee liqueur optional
For the Topping
  • 1/4 cup cocoa powder for dusting
  • 1 cup dark chocolate shavings optional

Method
 

Prepare the Cake Base
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, melted butter, eggs, vanilla extract, and cooled coffee. Mix until well combined.
  3. Pour the batter into the prepared cake pan and smooth the top.
  4. Bake in the preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely.
Prepare the Filling
  1. In a separate bowl, blend the mascarpone cheese, whipped cream, and powdered sugar until smooth.
  2. If using, add the coffee liqueur and mix until just combined.
Assemble the Cake
  1. Once the cake has cooled, cut it in half horizontally to create two layers.
  2. Place one layer of cake on a serving plate and spread half of the mascarpone filling on top.
  3. Place the second layer of cake on top and spread the remaining filling evenly over the top.
Finish the Cake
  1. Dust the top of the cake with cocoa powder and, if desired, sprinkle with dark chocolate shavings.
  2. Chill the cake in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
