Method
Prepare the Loaf
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, cream the softened butter. Add the eggs, milk, and orange zest, mixing until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the cranberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the Glaze
- While the loaf is baking, combine the powdered sugar and orange juice in a bowl and whisk until smooth.
- Once the loaf has cooled for 10 minutes, drizzle the glaze over the top.
- Allow the loaf to cool completely before slicing.
