  • 2 pounds baby potatoes halved

  • 2 tablespoons fresh parsley chopped

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the halved baby potatoes, olive oil, salt, and black pepper. Toss until the potatoes are well coated.
Roasting
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast the potatoes in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy, stirring halfway through.
Finishing Touches
  1. Once the potatoes are roasted, remove them from the oven.
  2. While still hot, sprinkle the crumbled feta cheese, lemon zest, and chopped parsley over the potatoes.
