Ingredients
  

For the Base
  • 2 pounds baby potatoes halved
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Flavor
  • 4 cloves garlic smashed
  • 1 lemon lemon juice freshly squeezed
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the halved baby potatoes with olive oil, salt, and black pepper. Toss until the potatoes are evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet, making sure they are not overcrowded.
  4. Roast the potatoes in the preheated oven for 25 minutes, turning them halfway through to ensure even crisping.
  5. After 25 minutes, add the smashed garlic cloves to the baking sheet and continue roasting for an additional 15 minutes, or until the potatoes are golden and crispy.
  6. Remove the potatoes from the oven and drizzle with freshly squeezed lemon juice. Toss to combine.
  7. Sprinkle with chopped parsley before serving for an added fresh flavor.
