Ingredients
  

For the Base
  • 8 slices whole grain bread crusts removed
  • 4 tablespoons cream cheese softened
For the Topping
  • 1 large cucumber thinly sliced
  • 1 teaspoon fresh dill chopped
  • 1 teaspoon lemon juice

Method
 

Prepare the Base
  1. Spread cream cheese evenly over one side of each slice of bread.
  2. Stack the slices on a plate, cream cheese side up.
Prepare the Topping
  1. In a bowl, combine the cucumber slices, dill, and lemon juice.
  2. Toss gently to coat the cucumber slices.
Assemble the Sandwiches
  1. Layer a generous amount of the cucumber mixture on half of the bread slices.
  2. Top with the remaining bread slices, cream cheese side down.
Cut and Serve
  1. Cut each sandwich into quarters or fingers, depending on your preference.
  2. Arrange on a serving platter and enjoy!
