Method
Prepare the Dough
- In a small bowl, activate the yeast by mixing it with warm milk and a teaspoon of sugar. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine flour, sugar, salt, lemon zest, and orange zest. Create a well in the center.
- Add the activated yeast mixture, melted butter, and eggs into the well. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
First Rise
- Place the dough in a greased bowl and cover with a damp cloth. Let it rise in a warm place for about 1 hour, or until doubled in size.
Shape the Bread
- After the dough has risen, punch it down and turn it out onto a floured surface.
- Divide the dough into three equal pieces and roll each into a long rope.
- Braid the three ropes together to form a loaf shape.
Second Rise
- Place the braided loaf on a parchment-lined baking sheet. Cover it with a cloth and let it rise for another 30 minutes.
Bake the Bread
- Preheat the oven to 350°F (175°C). Brush the loaf with the beaten egg and sprinkle with almonds and sugar.
- Bake in the preheated oven for 25-30 minutes until golden brown and sounds hollow when tapped on the bottom.
Cool and Serve
- Remove from the oven and let cool on a wire rack before slicing.
- Serve warm or at room temperature with butter or jam.
