Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 cup cake mix vanilla or funfetti flavor
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Topping
  • 1 cup rainbow sprinkles

Method
 

Prepare the Dough
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the all-purpose flour, cake mix, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the rainbow sprinkles gently into the dough.
Bake the Cookies
  1. Using a cookie scoop or tablespoon, drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.
  3. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
