Ingredients
  

For the Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Side
  • 2 cups broccoli florets
  • 1 tablespoon butter
  • 1 teaspoon lemon juice

Method
 

Prepare the Chicken
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them evenly with the marinade.
Cook the Chicken
  1. Place the marinated chicken thighs on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Prepare the Broccoli
  1. While the chicken is baking, bring a pot of water to a boil.
  2. Add the broccoli florets and blanch for 3-4 minutes until bright green and tender.
  3. Drain the broccoli, then return it to the pot. Add butter and lemon juice, and toss to coat.
Serve
  1. Once the chicken is done, let it rest for 5 minutes before serving.
  2. Serve the garlic herb chicken thighs alongside the buttery lemon broccoli.
