Ingredients
  

For the Beef
  • 3 pounds beef chuck roast
  • 1 cup honey
  • 2 tablespoons chipotle peppers in adobo sauce minced
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Tacos
  • 12 small corn tortillas
  • 1 cup fresh cilantro chopped
  • 1 cup red onion diced
  • 1 cup lime wedges

Method
 

Prepare the Beef
  1. Trim excess fat from the beef chuck roast and place it in a slow cooker.
  2. In a bowl, mix together honey, minced chipotle peppers, soy sauce, garlic powder, onion powder, salt, and black pepper.
  3. Pour the honey-chipotle mixture over the beef in the slow cooker.
  4. Cover and cook on low for 6-8 hours, or until the beef is tender and easily shreds with a fork.
Assemble the Tacos
  1. Once the beef is cooked, shred it using two forks and mix it with the cooking juices.
  2. Warm the corn tortillas in a dry skillet over medium heat until soft and pliable.
  3. Place a generous amount of the shredded beef on each tortilla.
  4. Top with chopped cilantro, diced red onion, and serve with lime wedges on the side.
