Lemon Asparagus Pasta

Ingredients
  

For the Pasta
  • 12 ounces spaghetti
  • 1 cup asparagus cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon juice and zest
For the Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to package instructions until al dente.
  3. During the last 2 minutes of cooking, add the asparagus pieces to the pot.
Make the Sauce
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the lemon juice and zest, salt, and black pepper. Cook for another minute.
Combine and Serve
  1. Once the pasta and asparagus are cooked, drain and add them to the skillet with the sauce.
  2. Toss everything together until well coated.
  3. Remove from heat and serve immediately, garnished with parmesan cheese and parsley.

Notes
