Ingredients
  

For the Muffins
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 3 large eggs
  • 1 cup buttermilk
  • 2 tablespoons lemon zest
  • 1/4 cup poppy seeds
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

Prepare the Muffin Batter
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, salt, and granulated sugar.
  3. In another bowl, mix the melted butter, eggs, buttermilk, and lemon zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the poppy seeds.
Bake the Muffins
  1. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  3. Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Prepare the Glaze
  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  2. Drizzle the glaze over the cooled muffins before serving.

Notes
