Ingredients
  

For the Base
  • 4 slices whole grain bread
  • 2 tablespoons butter softened
For the Filling
  • 1 cup shredded mozzarella cheese
  • 1/2 cup feta cheese crumbled
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup black olives sliced
  • 1 tablespoon fresh basil chopped

Method
 

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, sun-dried tomatoes, black olives, and basil. Mix well.
  2. Spread butter evenly on one side of each slice of bread.
  3. Place two slices of bread, butter-side down, on a preheated skillet over medium heat.
  4. Evenly distribute the cheese mixture on top of the bread in the skillet, then place the remaining slices of bread on top, butter-side up.
  5. Cook for 3-5 minutes or until the bottom is golden brown, then carefully flip the sandwiches and cook for another 3-5 minutes until the other side is golden and the cheese is melted.
  6. Remove from the skillet, let cool for a minute, then cut in half and serve warm.

Notes
