Ingredients
  

For the Base
  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter melted
For the Filling
  • 2 cups heavy cream chilled
  • 1 cup semi-sweet chocolate chips melted
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
For the Topping
  • 1 cup whipped cream for garnish
  • 1/4 cup chocolate shavings for garnish
  • 1/4 cup mini eggs for decoration

Method
 

Prepare the Base
  1. In a mixing bowl, combine the chocolate cookie crumbs and melted butter.
  2. Press the mixture firmly into the bottom and sides of a 9-inch pie pan to form the crust.
  3. Refrigerate the crust for at least 30 minutes to set.
Make the Filling
  1. In a large bowl, whip the chilled heavy cream until soft peaks form.
  2. In another bowl, mix together the melted chocolate chips, powdered sugar, and vanilla extract until smooth.
  3. Gently fold the whipped cream into the chocolate mixture until fully combined.
Assemble the Pie
  1. Pour the chocolate filling into the prepared crust, smoothing the top with a spatula.
  2. Cover the pie with plastic wrap and refrigerate for at least 3 hours or until set.
Serve the Pie
  1. Once set, remove the pie from the refrigerator.
  2. Top with whipped cream, chocolate shavings, and mini eggs as desired.
  3. Slice and serve chilled for a delicious treat.
