Method
Prepare the Peach Filling
- In a medium bowl, combine diced peaches with granulated sugar, cornstarch, and cinnamon. Mix well and set aside to allow the flavors to meld.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Make the Cookie Base
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the mixture, beating until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Assemble the Cookies
- Using a cookie scoop or tablespoon, drop spoonfuls of cookie dough onto the prepared baking sheet, leaving space between each cookie.
- Spoon a small amount of the peach filling onto the center of each cookie dough ball.
- In a bowl, combine oats, flour, brown sugar, and melted butter to create the topping. Sprinkle this mixture over the peach filling on each cookie.
Bake the Cookies
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
For extra flavor, consider adding a pinch of nutmeg to the peach filling or serving the cookies with a scoop of vanilla ice cream on top.
