Method
Prepare the Base
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Press the mixture firmly into the bottom of 6 individual dessert rings or a muffin tin lined with parchment paper.
- Bake for 10 minutes, then remove from oven and let cool completely.
Make the Cheesecake Filling
- In a large bowl, beat the softened cream cheese until smooth.
- Add sour cream, sugar, and vanilla extract. Mix until fully combined.
- Fold in the ground pistachios and whipped cream gently until the mixture is light and fluffy.
Assemble the Towers
- Spoon the cheesecake filling into the prepared dessert rings, filling them to the top.
- Smooth the tops with a spatula and refrigerate for at least 2 hours, or until set.
Prepare the Topping
- In a small saucepan, gently heat the honey until it becomes more liquid.
- Add the fresh blackberries to the honey and stir gently to coat.
Serve
- Carefully remove the cheesecake towers from the rings.
- Top each tower with the honey-coated blackberries before serving.
