Ingredients
  

For the Base
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter melted
  • 2 tablespoons granulated sugar
For the Cheesecake Filling
  • 16 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup pistachios finely ground
  • 1/4 cup heavy cream whipped
For the Topping
  • 1 cup blackberries fresh
  • 2 tablespoons honey

Method
 

Prepare the Base
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of 6 individual dessert rings or a muffin tin lined with parchment paper.
  4. Bake for 10 minutes, then remove from oven and let cool completely.
Make the Cheesecake Filling
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add sour cream, sugar, and vanilla extract. Mix until fully combined.
  3. Fold in the ground pistachios and whipped cream gently until the mixture is light and fluffy.
Assemble the Towers
  1. Spoon the cheesecake filling into the prepared dessert rings, filling them to the top.
  2. Smooth the tops with a spatula and refrigerate for at least 2 hours, or until set.
Prepare the Topping
  1. In a small saucepan, gently heat the honey until it becomes more liquid.
  2. Add the fresh blackberries to the honey and stir gently to coat.
Serve
  1. Carefully remove the cheesecake towers from the rings.
  2. Top each tower with the honey-coated blackberries before serving.
