Ingredients
  

For the Base
  • 1 pound Italian sausage sweet or spicy based on preference
  • 4 medium potatoes cubed
  • 1 tablespoon olive oil for sautéing
For the Vegetables
  • 2 medium bell peppers sliced (any color)
  • 1 medium onion sliced
  • 3 cloves garlic minced
For Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • salt to taste salt

Method
 

Cooking the Sausage and Potatoes
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the Italian sausage and cook until browned, about 5-7 minutes.
  3. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
  4. Add the cubed potatoes to the skillet and cook for about 15 minutes, stirring occasionally, until they start to crisp up.
Adding Vegetables
  1. Add the sliced bell peppers, onion, and minced garlic to the skillet with the potatoes.
  2. Sprinkle in the oregano, paprika, salt, and black pepper.
  3. Stir everything together and cook for an additional 10 minutes until the vegetables are tender.
Finishing Up
  1. Return the cooked sausage to the skillet and mix well.
  2. Cook for another 2-3 minutes to heat through.
  3. Taste and adjust seasoning if necessary.
