Cooking the Chicken
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove and set aside.
Making the Onion Sauce
- In the same skillet, add the sliced onions and sauté until they are soft and translucent, about 5-6 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and soy sauce, stirring to combine. Bring to a simmer.
- Add the cornstarch mixture to the sauce, stirring continuously until the sauce thickens, about 2-3 minutes.
Combine and Serve
- Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for another 2-3 minutes to heat everything through.
- Garnish with chopped parsley before serving.
