Ingredients
  

For the Base
  • 1 pound boneless chicken thighs trimmed
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth low sodium
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
For the Topping
  • 1 cup frozen peas thawed
  • 1 tablespoon fresh parsley chopped

Method
 

  1. In the slow cooker, combine the chicken thighs, rinsed rice, chicken broth, diced onion, minced garlic, paprika, thyme, black pepper, and salt.
  2. Stir the ingredients together until well mixed.
  3. Cover the slow cooker with the lid and cook on low for 6 hours or on high for 3 hours.
  4. About 30 minutes before serving, add the thawed peas to the slow cooker.
  5. Once the cooking time is complete, ensure the chicken is cooked through and the rice is tender.
  6. Gently fluff the rice with a fork and stir in the chopped parsley before serving.
