Method
Cooking the Pasta
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes.
- Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.
Preparing the Sauce
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes and cook for 3-4 minutes until they begin to soften.
- Stir in the shrimp and red pepper flakes. Cook for about 4-5 minutes until the shrimp are pink and cooked through.
- Add the fresh spinach and cook until wilted, about 2 minutes.
Combining Ingredients
- Add the cooked spaghetti to the skillet with the shrimp and vegetables. Toss to combine.
- If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt and black pepper to taste.
Serving
- Serve the pasta hot, garnished with grated parmesan cheese.

Notes
For added flavor, consider adding a squeeze of lemon juice before serving. You can also substitute the shrimp with chicken or keep it vegetarian by omitting the shrimp.
