Turkish Pasta, also known as 'Manti', is a delicious and hearty dish featuring small dumplings filled with spiced meat, served with a rich yogurt sauce and a sprinkle of sumac.

Ingredients
  

For the Dumplings
  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water adjust as necessary
  • 1/2 teaspoon salt
For the Filling
  • 1 cup ground beef
  • 1 small onion finely chopped
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon cinnamon
  • 1 tablespoon olive oil
For the Yogurt Sauce
  • 1 cup plain yogurt
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
For Serving
  • 1 teaspoon sumac for garnish
  • 2 tablespoons chopped parsley for garnish

Method
 

Make the Dough
  1. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the egg and water.
  2. Knead the mixture until a smooth dough forms, about 5-7 minutes. Cover and let it rest for 15 minutes.
Prepare the Filling
  1. In a skillet over medium heat, heat the olive oil. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the ground beef, paprika, black pepper, and cinnamon. Cook until the meat is browned and fully cooked. Set aside to cool.
Form the Dumplings
  1. Roll out the rested dough on a floured surface to about 1/8 inch thick.
  2. Cut the dough into 2-inch squares. Place a small amount of filling in the center of each square.
  3. Fold the corners of the square towards the center and pinch to seal, forming a dumpling.
Cook the Dumplings
  1. Bring a large pot of salted water to a boil. Add the dumplings in batches and cook for 5-7 minutes or until they float to the surface.
  2. Remove with a slotted spoon and drain on paper towels.
Prepare the Yogurt Sauce
  1. In a bowl, mix the yogurt with minced garlic, lemon juice, and salt until well combined.
Serve
  1. Plate the dumplings and drizzle with the yogurt sauce. Sprinkle sumac and chopped parsley on top before serving.

Notes
